Red kidney beans appear exactly as their name suggests: kidney-shaped, with a dark red colour. They hold their shape when cooked, so are great for dishes that involve simmering over a period of time. They have a mild taste on their own but absorb other flavours well. They are the principal ingredient in chilli con carne, and also make a fantastic base for vegetarian tacos.
Kidney beans are a good source of fibre, contain protein, vitamins and minerals. Uniquely, they contain Molybdenum, a trace mineral essential for optimizing the release and control of iron in the blood. They are also rich in folate, which helps to reduce tiredness and fatigue.
Prior to cooking , soak kidney beans overnight with a piece of seaweed for optimal digestion.
